Fresh Raw Watermelon Rind Sauce

New studies have again confirmed that watermelon rind is a great source of Vitamin C, Vitamin B6, Vitamin A, Magnesium, and Potassium. The great thing about all of these nutrients, is that they can be consumed in as little as a fifty calorie serving of fresh rind.

With the steady flow of published research on watermelon rind recently, the fruit is slowly working it's out of the traditional backyard BBQ trash bin, to becoming a leading health food.

With that being said, everybody in my family loves watermelon, which is indeed a treat on a hot summer day! I used to make pickles with leftover watermelon rind, or simply throw it away. Today I try pureeing it with my Vitamix 5200 machine and like the result very much.

The texture is more like applesauce. And I feel good, too, for conserving food and not wasting nutrients. (You can add honey or raw cane sugar if you like it to be sweet.)
