Sauteed Mushrooms

Often grouped with vegetables, mushrooms provide many of the nutritional attributes of produce, as well as attributes more commonly found in meat, beans or grains. Mushrooms are low in calories, fat-free, cholesterol-free and very low in sodium, yet they provide important nutrients, including selenium, potassium, riboflavin, niacin, vitamin D and more.

Mushrooms can be eaten raw or cooked. This is one way I like to enjoy them. The soy sauce really make them very flavorful.




























Ingredients
  • 1 Pound Mushrooms
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Chopped Garlic
  • 1 Tablespoon Soy Sauce
  • Hot Pepper (optional)

Directions

Wash the mushrooms. Slice the small mushrooms thickly and cut the large ones in a large dice.

Heat the olive oil in a Cast Iron Skillet (as shown below in the picture). Add mushrooms and cook over medium heat for about 8 minutes, stirring often, until they are tender and begin to release their juices. Stir in chopped garlic and soy sauce and cook for 2 more minutes. Serve warm.
