Yam Bread and Collard Greens
















Toast Yam Bread

  • 1 3/4 C organic wheat berries ground to whole wheat flour by Vitamix in 1 minute
  • 4 C non-bleach all purpose flour
  • 1 yam cooked in microwave oven high for 7 minutes
  • 2 C water added to Vitamix with cooked yam and puree for 30 seconds
  • 1 t yeast
  • 3 T sugars
  • 1 t salt
  • 1 stalk of rosemary from Chen's Organic Garden
Mix all ingredients together and knead. Shape into a loaf and let rise for 2 hours. Bake for 40 minutes at 350F. Slice the bread and toast.


Stir Fry Collard Greens

  • 1 T olive oil
  • Collard greens from Wiley's organic farm
  • 1 onion minced
  • 2 clove garlic minced
  • Turkey breast cut into small pieces (optional)
  • Hot pepper (optional)
  • Salt to taste
